In Relief Society I we had a class on how to make bread. Now, I really enjoy making bread and normally make our own bread every week. This was very different and lots of fun. So much fun, I need to tell the world about it. We were taught to make artisan bread – anything beautiful, extraordinary or found in a restaurant. It was all based off this book by Jeff Hertzberg and Zoe Francois:
Artisan Bread in Five Minutes a Day
It has changed the way I view baking, especially breads and pastries. I like it so much that I bought the book after borrowing it from the library.
The premise of the book is that no one has time for fresh bread any more. But everyone has 5 minutes a day and they have made a bread recipe that can be made in 5 minutes a day and be delicious. The book has tons of recipes to do this, but if you take just their master recipe, you can make just about anything: bread, rolls, pizza dough, naan, pita bread, peasant loves…. You name it, it is probably in the book.
It says that if you have a very wet dough, the yeast will not over-act and will stay good in the fridge for up to 2 weeks. So each time you want to have something tasty, you just pull a hunk out of the fridge, shape it and bake it. That’s it! 5 active minutes of labor a day. I have had so much fun with this and we love the bread!
